Halloween Deviled Eggs

Use WIC approved foods to make this fun Halloween recipe!

 

Ingredients:

6 boiled eggs

1 avocado

Green & Purple or Red food coloring

Paprika, Salt & Pepper to taste

 

Boil 6 eggs. Crack the shell of each egg all around with a spoon, but don’t peel them! Add the boiled eggs into a tupperware filled with water that covers all of the eggs, and add red or purple food coloring to the water. Let them sit in the fridge overnight to soak up the food coloring and give a spooky spider web effect. Peel the eggs and cut in half. Remove the yolk and add to a bowl along with a sliced avocado. Mix the yolk & avocado together and add green food coloring to enhance the color. Add a spoonful of the green mixture to each egg and top with paprika, salt & pepper.

WIC Inspired Recipes – Ratatouille

Cuddle up with the family and watch the Disney movie Ratatouille while having some ratatouille for dinner! This recipe is an easy comfort food that includes lots of veggies and goes perfect with garlic bread.

Ratatouille 

4 tbsp olive oil 

4 garlic cloves (minced)

1/2 small onion (chopped)

1/3 cup shredded carrots

14 oz can crushed tomatoes

1/4 cup fresh basil

1/4 cup fresh parsley

1 small eggplant (thinly sliced, about ⅛ inch thick)

1 zucchini (thinly sliced, about ⅛ inch thick)

1 yellow squash (thinly sliced, about ⅛ inch thick)

3 Roma tomatoes (thinly sliced, about ⅛ inch thick)

1 tsp dried basil

1/2 tsp dried parsley

salt (to taste)

black pepper (to taste)

Parmesan cheese (shredded) 

Try to use the freshest produce possible, not those tomatoes that look like you should use them up before they go bad. You want the ratatouille to have a nice, even texture and the vegetables are easier to slice when they are fresh. Slice the eggplant, zucchini, yellow squash & tomatoes as evenly as possible to ensure they cook evenly in the oven.

Preheat the oven to 375F. In a large nonstick pan, heat 2 tbsp of olive oil over medium high heat. Add in the onion, garlic, and carrot and cook about 5 – 7 minutes until tender.

Next, add in the crushed tomatoes and seasonings, simmer for 15 minutes. Taste and adjust the seasoning as needed. Once the sauce has thickened, pour into a 2 quart baking dish.

Arrange the sliced vegetables in a circular pattern standing upright in the dish over the sauce. Brush with the remaining olive oil. 

Cover and bake for 40 minutes, then uncover and bake until vegetables are tender and easily pierced with a fork.

Sprinkle shredded parmesan cheese evenly on top and serve immediately. 

Tasty Tip: Garlic bread is a perfect addition to this recipe!

WIC Inspired Recipe – Oatmeal Banana Muffins

Use WIC Oatmeal, Bananas, Eggs, Milk + More For This Recipe

This whole wheat, maple-sweetened banana muffins are so tasty and moist, you wouldn’t guess they’re healthy muffins! They’re easy to make as well, with basic ingredients, including WIC foods,  that can go in just one mixing bowl. If you love bananas as much as I do, then try cutting up an extra banana & adding a slice in the middle of each muffin before baking. 

The recipe makes 12 muffins. These muffins will keep in the fridge for up to 4 days.

Maple Sweetened Oatmeal Banana Muffins

⅓ cup extra virgin olive oil

½ cup maple syrup or honey

2 eggs

1 cup packed mashed ripe bananas (about 3 bananas)

¼ cup milk of choice

1 teaspoon baking soda

1 teaspoon vanilla extract

½ teaspoon salt

½ teaspoon cinnamon, plus more for sprinkling on top

1 ¾ cups white whole wheat flour or regular whole wheat flour

⅓ cup rolled oats, plus more for sprinkling on top

1 teaspoon raw sugar or other granulated sugar, for sprinkling on top

Preheat oven to 325 degrees. If you don’t have a non-stick muffin pan, grease all 12 cups of your muffin tin.

In a large bowl, beat the olive oil and maple syrup together with a whisk. Add the eggs and beat well. Mix in the mashed bananas and milk, followed by the baking soda, vanilla extract, salt and cinnamon. Add the flour and oats to the bowl and mix with a large spoon until combined.

Divide the batter evenly between the muffin cups. Sprinkle the tops of the muffins with a small amount of oats, followed by a light sprinkling of sugar. Bake muffins for 22 to 25 minutes, or until a toothpick inserted into a muffin comes out clean.

Yogurt Bark

2 cups Plain Yogurt

¼ cup Maple Syrup

½ tsp Pure Vanilla Extract

¼ tsp Fresh Lemon Juice

Strawberries, sliced

Blueberries

Chopped Pecans (Optional)

Line a baking sheet with wax paper and set aside. In a large mixing bowl combine yogurt, maple syrup, vanilla extract, & lemon juice; whisk until thoroughly combined.

Transfer yogurt mixture to a previously prepared baking sheet and spread it around to an even thickness. Top with berries. Garnish with nuts (optional). Freeze for 3 hours or until firm. Cut into pieces and serve. Keep in the freezer.

WIC Inspired Recipes: Frittata Muffins

This easy frittata muffin recipe is a staple in my household. They make for a great healthy breakfast or tasty snack, & they’re perfect for meal prepping or when you’re on the go. Frittata muffins are great for using produce you have in your fridge waiting to be used.

Nonstick cooking spray

6 large eggs

½ cup whole milk

Salt & pepper

½ cup shredded cheese

Your choice of vegetables. I like to use the following:

⅓ cup chopped onion

⅓ cup chopped bell pepper

⅓ cup chopped spinach (fresh or frozen)

½ cup chopped portobello mushrooms

1 zucchini, sliced thin

Heat oven to 350, spray muffin pan with nonstick cooking spray. In a large bowl, whisk together eggs, milk, ¼ tsp salt, ⅛ tsp pepper. Stir in cheese & vegetables of your choice.  Divide batter evenly among muffin cups. Add one slice of zucchini to each muffin cup & press into egg mixture until covered.Bake for 20 minutes. Let the frittata muffins cool for 5 minutes, then remove from cups & serve. To reheat any leftovers, place in microwave for 30 seconds.
