Breakfast Casserole Featuring WIC Foods Is Perfect For Christmas Brunch

You’re in for a treat with this easy and delicious breakfast casserole using WIC-approved foods like eggs, milk, and potatoes!

BREAKFAST CASSEROLE

20 oz shredded hash browns, thawed (or you can shred fresh potatoes)

1 lb breakfast sausage, cooked and drained

1 ¼ cup diced mix of onions and bell peppers

2 ½ cups shredded cheese

8 eggs

1 ⅓ cup milk

Salt, pepper, garlic powder, and paprika to taste

Heat a large skillet over medium high heat and brown the sausage, breaking it up into small pieces, until no pink remains. Drain excess fat in a strainer.

Preheat the oven to 350 degrees and grease a 9×13 inch pan with oil or butter.

Add the hashbrowns, cooked sausage, diced onion and bell pepper mix, and 2 cups of cheese. Mix the ingredients together and spread them out evenly.

Crack the eggs into a large bowl, then add the milk and seasonings. Mix until well blended. 

Pour the egg mixture over the ingredients in the pan and sprinkle the remaining ½ cup of cheese on top. Bake uncovered for 1 hour.

Try This Healthy Breakfast Twist On Classic Dessert Recipe

This easy recipe featuring WIC foods is so tasty, healthy, and filling that it’s great for anytime of the day – breakfast, snacks, or dessert.  If you feel like being creative, you can switch up your toppings by using different fruits, nuts, or different flavors of yogurt! Enjoy!

BREAKFAST BANANA SPLIT

½ cup Vanilla Yogurt

1 Banana – peeled & split in half

¼ cup Granola or Rolled Oats

¼ cup Mixed Berries – fresh or frozen

1 tbsp Peanut butter, heat up in microwave for 10 seconds at a time until melted

Optional – drizzle honey on top if you want it sweeter

Spread yogurt on a plate. Peel and split the banana and lay on top of yogurt. Top with granola, berries and peanut butter drizzle. Makes 1 serving.

WIC Inspired Recipes – Chilaquiles & Salsa

CHILAQUILES & SALSA 

Makes 2 servings.

SALSA

1 large onion

4 – 5 large tomatoes

1 jalapeno

(remove seeds from jalapeno, or replace with ½ bell pepper if you don’t want it spicy)

Juice of ½ lime or lemon

1 cup cilantro

Salt and/or sugar to taste

For extra flavor, add a whole bulb of garlic to the veggies!

Cook vegetables in the oven at 425 degrees for 30 minutes, turning the veggies over halfway through. Allow to cool for about 15 minutes, then add veggies into a blender along with cilantro and lime or lemon juice. Blend until there’s no chunks, then it’s ready to serve!

CHILAQUILES

2 tbsp Vegetable oil

6 Corn tortillas, each cut into 6 wedges

2 Eggs

1 cup of Salsa 

(To save time, you can use WIC approved Always Save Mild Salsa from JC Food Mart instead of making your own)

Pepper

Additional Optional Toppings – Sliced avocado, shredded cheese, onion, cilantro, or even more salsa!

In a large non-stick pan, coat generously with about 2 tbsp vegetable oil and heat on stove top to medium high heat. Once the oil is hot, add the tortillas and fry until golden brown. Remove from heat and move tortillas to a paper towel lined plate to soak up any excess oil. Remove any remaining brown tortilla pieces in the pan. Add 1 tablespoon of oil to the pan, add the salsa and let cook for a few minutes while stirring occasionally. Add the fried tortilla wedges to the pan and gently turn over until tortillas are coated with salsa. Let cook for a few more minutes until tortillas are thoroughly soaked in salsa, yet still slightly crispy. Remove from heat and move tortillas to the plates. Return the pan to the stove top and fry the eggs. On each plate, top the tortillas with the fried eggs. Top with your choice of favorite toppings like shredded cheese and/or avocado for some extra flavor!

Easy, Fast Breakfast Or Snack With WIC Foods

Seems like we are always in a rush. Looking for a quick and easy breakfast or snack? This one is perfect for you or your littles. It is made using only WIC foods: cereal, peaches and yogurt. Add a little dash of cinnamon for extra taste.

PEACH PARFAIT

1 cup Honey Bunches of Oats with Almonds (or any WIC cereal of your choice)

1 snack size peach cup

1 cup of peach yogurt

Sprinkle of cinnamon

Pour ½ cup of cereal in a cup. Smear ½ cup of yogurt on top of cereal. Add ½ of the peach cup on top. Repeat layers of cereal, yogurt and peach cup. Top with a sprinkle of cinnamon. Enjoy!

Breakfast Recipes With WIC Foods Good Enough To Eat All Day

Some might say breakfast is the best meal of the day. 

Texas WIC offers many healthy breakfast foods for pregnant women and children to help get the day off to a great start. But it is also a great way to end a day.

Here are some examples of healthy WIC foods that make the best breakfast ingredients, no matter when you eat them.

Eggs , Whole Wheat Bread, Whole Wheat Tortillas, Fruit, Vegetables, Cereal, Oatmeal, Milk, Fruit Juice, Cheese, Yogurt are all part of the Texas WIC program.

These foods are healthy and great served individually. Combine to make some of the best breakfast foods: omelets, tacos, breakfast sandwiches, smoothies and more. But changing it up is always fun. Here are a few WIC breakfast foods with a twist your family will love

BREAKFAST QUESADILLA

2 Whole Wheat Tortilla

2 large eggs

¼ cup shredded cheese

1 teaspoon butter

Cooking spray

Salsa

Sliced Avocado

Crack eggs in a bowl and whisk. Spray skillet with cooking spray over medium-high heat. Put eggs in a pan and cook for about 5 minutes. Put eggs on a plate. Wipe pan clean. Lightly butter one side of the tortilla. Place butter side down in the pan. Put ½ of the scrambled eggs on top of the tortilla and add half of the cheese and fold the tortilla in half.  Cook on each side until the tortilla is crispy and the cheese has melted, about 3 minutes. Repeat to make a second tortilla. Serve with salsa and sliced avocado.

 

PEANUT BUTTER, BANANA OVERNIGHT OATS

½ cup old fashioned rolled oats

½ cup milk

1/4 cup plain yogurt 

1 teaspoons maple syrup or honey

1/2 teaspoon vanilla extract, optional

pinch of salt

1 tablespoon peanut butter

Sliced bananas

Add oats, milk, yogurt, maple syrup and salt and ½ tablespoon of the peanut butter into a container with an air-tight lid. Stir. Place in the fridge overnight. The next morning, remove the lid. Stir oats and add a splash of milk. Top with remaining peanut butter and slice bananas. Overnight oats can remain in the fridge for up to 5 days in a sealed container.

Lemon Blueberry Muffins

Sometimes we all need a treat, and this one is perfect for a weekend snack or breakfast. Let your kiddos help you with this one in the kitchen. They can help mix in a few ingredients, stir the batter or just spend time with the family in the kitchen. This special treat also has a few WIC ingredients (milk, egg, and berries).

Lemon Blueberry Muffins

2 cups of blueberries, fresh or frozen (You can also substitute a mix of berries of your choice)

1 stick of butter

1 lemon

½ cup milk

1 egg

2 cups all purpose flour

2 tsp baking powder

1 tsp kosher salt

1 cup, 1 tbsp sugar

1 tsp vanilla extract

Heat the oven to 375. Zest a lemon over a stick of softened butter. Add one cup of sugar and beat together until light and fluffy, then add the egg and vanilla extract and beat again until mixed. Toss the blueberries with ¼ cup of flour, then whisk remaining flour into the batter along with the baking powder and salt. Add the dry ingredients a little at a time, while alternating with the milk, and beat until creamy. Fold in the blueberries gently with a spatula. Transfer the batter into a lightly greased 12 piece muffin pan and bake for 20 minutes. Remove from the oven and add remaining sugar on top of each muffin. Return to the oven for about 5 minutes or until muffins are lightly browned on top and sugar has caramelized. Let cool for 5 – 10 minutes then serve. Makes 12 muffins

COLORING EGGS

Pick up a dozen eggs for your kiddos to color this Easter. We have made a step-by-step guide for coloring eggs in this blog post. This is a great activity for kids of all ages. Plus, they will love eating the results of their creative activity.

HUNTING EGGS

There is no better way to welcome spring than to enjoy some outside time with the kids in the fresh spring air. Hunting for eggs is such a fun outdoor activity for kids and adults alike. If you aren’t up for hiding colored eggs where you live, search social media for fun neighborhood egg hunts close to where you live. Another way to find a nearby egg hunt is to search on Google. EATING EGGS

Eggs are so delicious and nutritious. It’s why they are a favorite WIC food. Here are a few great recipes to enjoy for Easter:

MICROWAVE EGG, CHEESE & PEPPER COFFEE MUG SCRAMBLE

2 large eggs

2 tablespoons milk

2 tablespoons cheddar cheese

1 tablespoon chopped tomato

1 teaspoon minced pickled jalapeño pepper, optional

Pinch each salt and pepper

Whisk together eggs, milk, cheese, tomato, jalapeño, salt, and pepper. Pour into well-greased 12-oz microwave-safe mug or mason jar. Microwave on High for 30 seconds; Stir. Microwave for 70 to 80 seconds or until eggs are puffed and set. Substitute prepared salsa for the chopped tomato and jalapeño if desired.

Make this recipe from the American Egg Board ahead of time for an amazing Easter breakfast:

Simple Breakfast Strata

4 Slices whole grain bread

4 Eggs

½ cup milk

½ teaspoon dried thyme or oregano leaves

6 slices Canadian-style bacon, chopped

½ cup shredded Cheddar cheese (2 oz.)

Place bread in a single layer in greased 8-inch square baking dish. Beat eggs, milk, and thyme in a medium bowl until blended; pour over bread. Sprinkle with bacon. Refrigerate, covered, at least 30 minutes or as long as overnight. Heat oven to 350°F. Remove strata from refrigerator; uncover and let stand while oven heats. Bake, uncovered, in the center of 350°F oven for 30 minutes. Sprinkle with cheese. Bake until cheese is melted and strata is puffed, golden and firm in the center, about 5 minutes longer.

WIC Inspired Recipe – Turkish Eggs

For this week’s WIC-inspired recipe we’re bringing you Turkish eggs! This dish is simple to make and uses WIC-approved ingredients.

Turkish Eggs, or Cilbir, is a traditional Turkish dish with simple ingredients like yogurt, garlic, red pepper flakes, poached eggs, & butter. There are records of çılbır being eaten by Ottoman sultans as far back as the 15th century, and it’s often known as Turkish comfort food. 

Today, Turkish eggs can make a great breakfast or snack using WIC ingredients, including eggs, yogurt, and whole wheat bread. 

Turkish Eggs (Cilbir)

3 Eggs

1 Clove of Garlic

½ Cup of Thick Plain Yogurt

2 tbsp Butter

2 tsp Red Pepper Flakes

3 Slices of Whole Wheat Bread

1 tbsp White Vinegar

Salt, Pepper, & Dill to taste

Spoon yogurt onto a plate & use the back of the spoon to spread it out. Melt butter in a saucepan on medium heat, add minced garlic & red pepper flakes. Stir until color is uniform & remove from heat.

Fill a large saucepan with 2 – 3 inches of water & bring to a boil. Reduce heat to medium-low, pour in vinegar, and keep at a simmer. Crack an egg into a small bowl or ramekin and gently slip the egg into the simmering water. Repeat with remaining eggs. Cook the eggs for 3 minutes until the egg whites are firm & the yolk has thickened but not hard. Remove eggs with a slotted spoon & add to plate with yogurt. 

Spoon the butter, garlic & chili pepper mixture on top of the poached eggs & sprinkle with black pepper, a pinch of salt, & dill to taste. Toast the bread until lightly browned. Dip into the Turkish eggs & enjoy! Makes 2 Servings.

WIC Inspired Recipes – Banana & Egg Pancakes

These banana & egg pancakes are quick & easy to make & can be enjoyed even by some of the pickiest toddlers. This simple pancake recipe only uses 2 main ingredients & is so delicious that you may never make regular pancakes again!

Banana & Egg Pancakes

2 Eggs

1 Banana

Cinnamon

Oil (Olive oil, etc)

Maple Syrup or Honey, Optional

Peel the banana & mash in a medium-sized bowl. In a separate bowl, crack the eggs & whisk them together. Pour eggs into the bowl of mashed banana, add a dash of cinnamon, and mix together. Heat a pan to medium heat & add oil. Slowly drop a large spoonful at a time of banana & egg mixture to pan & heat until golden brown on both sides. Top with honey, syrup, or your choice of fruit.

WIC Inspired Recipes: Frittata Muffins

This easy frittata muffin recipe is a staple in my household. They make for a great healthy breakfast or tasty snack, & they’re perfect for meal prepping or when you’re on the go. Frittata muffins are great for using produce you have in your fridge waiting to be used.

Nonstick cooking spray

6 large eggs

½ cup whole milk

Salt & pepper

½ cup shredded cheese

Your choice of vegetables. I like to use the following:

⅓ cup chopped onion

⅓ cup chopped bell pepper

⅓ cup chopped spinach (fresh or frozen)

½ cup chopped portobello mushrooms

1 zucchini, sliced thin

Heat oven to 350, spray muffin pan with nonstick cooking spray. In a large bowl, whisk together eggs, milk, ¼ tsp salt, ⅛ tsp pepper. Stir in cheese & vegetables of your choice.  Divide batter evenly among muffin cups. Add one slice of zucchini to each muffin cup & press into egg mixture until covered.Bake for 20 minutes. Let the frittata muffins cool for 5 minutes, then remove from cups & serve. To reheat any leftovers, place in microwave for 30 seconds.
