WIC Inspired Recipes: Limeade

limeade

LIMEADE

1 cup warm water

1 cup fresh squeezed lime juice (About 12 medium sized limes)

3 cups cold water

1 cup sugar

Combine the warm water and sugar in a pitcher, stir until sugar is dissolved. 

Stir in the lime juice, then add the cold water and stir. Chill before serving. 

Serve in a glass with ice and garnish with a slice of lime or mint leaves if you want to be fancy!

WIC Inspired Recipes – Chilaquiles & Salsa

CHILAQUILES & SALSA 

Makes 2 servings.

SALSA

1 large onion

4 – 5 large tomatoes

1 jalapeno

(remove seeds from jalapeno, or replace with ½ bell pepper if you don’t want it spicy)

Juice of ½ lime or lemon

1 cup cilantro

Salt and/or sugar to taste

For extra flavor, add a whole bulb of garlic to the veggies!

Cook vegetables in the oven at 425 degrees for 30 minutes, turning the veggies over halfway through. Allow to cool for about 15 minutes, then add veggies into a blender along with cilantro and lime or lemon juice. Blend until there’s no chunks, then it’s ready to serve!

CHILAQUILES

2 tbsp Vegetable oil

6 Corn tortillas, each cut into 6 wedges

2 Eggs

1 cup of Salsa 

(To save time, you can use WIC approved Always Save Mild Salsa from JC Food Mart instead of making your own)

Pepper

Additional Optional Toppings – Sliced avocado, shredded cheese, onion, cilantro, or even more salsa!

In a large non-stick pan, coat generously with about 2 tbsp vegetable oil and heat on stove top to medium high heat. Once the oil is hot, add the tortillas and fry until golden brown. Remove from heat and move tortillas to a paper towel lined plate to soak up any excess oil. Remove any remaining brown tortilla pieces in the pan. Add 1 tablespoon of oil to the pan, add the salsa and let cook for a few minutes while stirring occasionally. Add the fried tortilla wedges to the pan and gently turn over until tortillas are coated with salsa. Let cook for a few more minutes until tortillas are thoroughly soaked in salsa, yet still slightly crispy. Remove from heat and move tortillas to the plates. Return the pan to the stove top and fry the eggs. On each plate, top the tortillas with the fried eggs. Top with your choice of favorite toppings like shredded cheese and/or avocado for some extra flavor!

Toddler Snack Boxes Perfect For Busy Moms

WIC Food Tip Perfect For Busy Moms

Toddlers love snacks! Moms of little ones may find themselves running around trying to find snacks on demand. Here is a great WIC food tip to use your WIC foods to make a perfect snack box for your little one.

One stress-free way to help busy moms looking to save some time, are pre-made snack boxes. Dig around in your cupboard for some plastic containers with lids. It doesn’t have to be fancy. One with compartments is perfect, but a food storage container without dividers also works. (TIP: You can use cupcake liners to make your own compartments) 

Grab a few of your toddler’s favorite WIC foods. Create a fun assortment of 3 to 4 single serving snacks in each container to make a perfect toddler-size snack pack to store in the fridge. Some ideas for your containers include:  cheese cubes, sliced strawberries, orange slices, blueberries, avocados, healthy WIC cereal (without the milk),  yogurt, peanut butter and whole wheat bread.  Make a whole peanut butter sandwich and cut into 1/4ths. Put one fourth in a container. 

Store the snack packs in the fridge until needed.  Making 2 or 4 containers at a time is perfect to have on hand when your little one wants something quick to eat.

This is a great way to help make sure your little one is eating healthy WIC foods. You can also get your kids involved in making their “snack packs” so they are excited to eat healthy foods.

Recipe Spotlight Using WIC Foods

In recognition of Hispanic Heritage Month, we will be spotlighting several recipes you can make in your kitchen. This one, “A Simple Mexican Salad” is from the USDA website and came from the Oregon State University Cooperative Extension Service. It’s a refreshing salad with a little bite. It’s cool and refreshing flavors are very comforting. 

 

A Simple Mexican Salad

Chili powder and lime juice are the secret ingredients in this cucumber and orange salad.

2 cucumbers

2 oranges

1 lemon or lime (the juice)

1/2 teaspoon chili powder

1/2 teaspoon salt

Wash the cucumbers, oranges and lemon or lime under cold running water. Slice the cucumbers. Peel and cut the oranges into small pieces. Place cucumber slices and orange pieces in a medium size bowl. Add chili powder, lemon or lime juice and salt.

Breakfast Recipes With WIC Foods Good Enough To Eat All Day

Some might say breakfast is the best meal of the day. 

Texas WIC offers many healthy breakfast foods for pregnant women and children to help get the day off to a great start. But it is also a great way to end a day.

Here are some examples of healthy WIC foods that make the best breakfast ingredients, no matter when you eat them.

Eggs , Whole Wheat Bread, Whole Wheat Tortillas, Fruit, Vegetables, Cereal, Oatmeal, Milk, Fruit Juice, Cheese, Yogurt are all part of the Texas WIC program.

These foods are healthy and great served individually. Combine to make some of the best breakfast foods: omelets, tacos, breakfast sandwiches, smoothies and more. But changing it up is always fun. Here are a few WIC breakfast foods with a twist your family will love

BREAKFAST QUESADILLA

2 Whole Wheat Tortilla

2 large eggs

¼ cup shredded cheese

1 teaspoon butter

Cooking spray

Salsa

Sliced Avocado

Crack eggs in a bowl and whisk. Spray skillet with cooking spray over medium-high heat. Put eggs in a pan and cook for about 5 minutes. Put eggs on a plate. Wipe pan clean. Lightly butter one side of the tortilla. Place butter side down in the pan. Put ½ of the scrambled eggs on top of the tortilla and add half of the cheese and fold the tortilla in half.  Cook on each side until the tortilla is crispy and the cheese has melted, about 3 minutes. Repeat to make a second tortilla. Serve with salsa and sliced avocado.

 

PEANUT BUTTER, BANANA OVERNIGHT OATS

½ cup old fashioned rolled oats

½ cup milk

1/4 cup plain yogurt 

1 teaspoons maple syrup or honey

1/2 teaspoon vanilla extract, optional

pinch of salt

1 tablespoon peanut butter

Sliced bananas

Add oats, milk, yogurt, maple syrup and salt and ½ tablespoon of the peanut butter into a container with an air-tight lid. Stir. Place in the fridge overnight. The next morning, remove the lid. Stir oats and add a splash of milk. Top with remaining peanut butter and slice bananas. Overnight oats can remain in the fridge for up to 5 days in a sealed container.

Lemon Blueberry Muffins

Sometimes we all need a treat, and this one is perfect for a weekend snack or breakfast. Let your kiddos help you with this one in the kitchen. They can help mix in a few ingredients, stir the batter or just spend time with the family in the kitchen. This special treat also has a few WIC ingredients (milk, egg, and berries).

Lemon Blueberry Muffins

2 cups of blueberries, fresh or frozen (You can also substitute a mix of berries of your choice)

1 stick of butter

1 lemon

½ cup milk

1 egg

2 cups all purpose flour

2 tsp baking powder

1 tsp kosher salt

1 cup, 1 tbsp sugar

1 tsp vanilla extract

Heat the oven to 375. Zest a lemon over a stick of softened butter. Add one cup of sugar and beat together until light and fluffy, then add the egg and vanilla extract and beat again until mixed. Toss the blueberries with ¼ cup of flour, then whisk remaining flour into the batter along with the baking powder and salt. Add the dry ingredients a little at a time, while alternating with the milk, and beat until creamy. Fold in the blueberries gently with a spatula. Transfer the batter into a lightly greased 12 piece muffin pan and bake for 20 minutes. Remove from the oven and add remaining sugar on top of each muffin. Return to the oven for about 5 minutes or until muffins are lightly browned on top and sugar has caramelized. Let cool for 5 – 10 minutes then serve. Makes 12 muffins

Temperatures are also beginning to heat up so these recipes are easy, refreshing no-fuss bites. They are the perfect way for you to keep everyone satisfied without having to spend too much time in the kitchen. Plus, little helpers can also get involved for the perfect quality family time.

 

FRUIT SPARKLER DRINK

Break out your red and blue fruits and add them to your ice water or juice for a cool, refreshing treat. A few fun fruits to try are watermelon, strawberries, and blueberries. Don’t forget to let the kiddos help.  This is a perfect way to celebrate while spending time outside this Memorial Day weekend. 

PATRIOTIC CHEESE TRAY

Cheese platters have never been more popular! Cut up some of your favorite fruits and cheeses and arrange in fun patriotic ways. Make a red, white and blue design, like the one in the photo, using blueberries, white cheese cubes and cubed watermelon. You could also use strawberries. The design possibilities are endless and the kids will love getting involved! 

 

VEGGIE ROLL-UPS

Roll-ups make a simple, healthy snack or lunch the kids will love. Place a whole wheat tortilla on a plate, add your favorite salsa, dressing, vegetables, and cheese, and roll! Cut the rolled tortilla into bite-size pieces and enjoy! A few filling ideas include and combination of the following WIC-approved foods:  lettuce, tomato, cheese, apple, avocado, guacamole, cucumbers, raw or cooked mushrooms, and beans!

Once made and sliced, arrange on a platter for a quick family-style meal for everyone.

 

DON’T FORGET THE WATERMELON

No matter how you cut it, watermelon is a summertime staple. It’s perfect for hot days because it even can help you stay hydrated. There are so many fun ways to eat this fruit. Cut it into cubes and place it on skewers for a fun kebob. The kiddos can help by cutting watermelon slices with cookie cutters and creating fun shapes (Oh my Stars for Memorial Day!) You can even quarter watermelon and dig in with a spoon!
